Gudauri is a ski resort. Out of season there is nothing, and I stress nothing, to attract the visitor, or tempt them to stay here. We had the misfortune to stay at the Hotel Marco Polo

Avoid this hotel. The Guest Relations manager has a cut and paste comment on most of the negative TripAdvisor reviews on the hotel " I am saddened to read that on certain aspects of your stay we failed to meet your expectations.Your comment has been shared with our management to review and it will certainly be taken in consideration." So here is another negative review for the poor sod to deal with.
Basically this hotel should not be operating at the moment. They are replacing the main staircase, and the lobby is swathed in plastic sheeting, and the noise of building works carries on throughout the day. In addition they are building an apartment block in the hotel grounds opposite the front entrance, and again that noise goes on all day. The (basic) restaurant caters for groups. 3 bus loads, each with 40 people fill the restaurant, and staff try to push individual customers like ourselves to unsavoury corners.
There was no service at all - both dinner and breakfast were buffets - and I could not even get a drink. Reception staff were not helpful. There are no other restaurants in walking distance. So my advice is to try another hotel if you need accommodation in the area. Certainly I can confidently say that I would never stay in this hotel again
